Southwestern Pasta Salad

This kicked up the salad with a zesty Greek yoghurt dressing is filled with the fixings from taco seasoning to cilantro, cheddar cheese, avocado, black beans, and corn. really easy to combine up before time, too!

INGREDIENTS

FOR THE salad


  • kosher salt
  • 1 lb. dry pasta, like an elbow, bow tie, or rotini
  • 1 15-oz. will corn kernels
  • 1 15-oz. will black beans
  • 1 c. shredded cheddar
  • 1 c. halved cherry tomatoes
  • 2 avocados, diced
  • 1/3 c. chopped cilantro

FOR THE DRESSING


  • 1 c. Greek yoghurt
  • 1/3 c. extra-virgin oil
  • 1 tbsp. honey
  • 1 tbsp. apple cider vinegar
  • 2 cloves garlic, minced
  • 2 Limes, juiced
  • 1/2 jalapeƱo, chopped
  • 1 1/2 tbsp. Taco Seasoning
  • kosher salt


DIRECTIONS


  • In a giant pot of salt-cured boiling water, cook food in step with package directions till hard. Drain and funky, 5 minutes.
  • Meanwhile, build dressing: Whisk all ingredients along. style and add salt as desired.
  • Stir corn, black beans, cheese, tomatoes, avocados and cilantro in with food. Toss with dressing. cowl tightly and refrigerate 1 hour before serving.
