INGREDIENTS
FOR THE salad
- kosher salt
- 1 lb. dry pasta, like an elbow, bow tie, or rotini
- 1 15-oz. will corn kernels
- 1 15-oz. will black beans
- 1 c. shredded cheddar
- 1 c. halved cherry tomatoes
- 2 avocados, diced
- 1/3 c. chopped cilantro
FOR THE DRESSING
- 1 c. Greek yoghurt
- 1/3 c. extra-virgin oil
- 1 tbsp. honey
- 1 tbsp. apple cider vinegar
- 2 cloves garlic, minced
- 2 Limes, juiced
- 1/2 jalapeƱo, chopped
- 1 1/2 tbsp. Taco Seasoning
- kosher salt
DIRECTIONS
- In a giant pot of salt-cured boiling water, cook food in step with package directions till hard. Drain and funky, 5 minutes.
- Meanwhile, build dressing: Whisk all ingredients along. style and add salt as desired.
